What the official text supports
The experience description names the three sides in plain language: the cow murders everyone and must avoid security, the researcher runs and hides, and security eliminates the cow. Servers hold 12 players. The description does not say how many of each role spawn, how long a round lasts, or whether the knife is thrown or swung.
A community write-up says the cow, once transformed, holds the equipped knife in its mouth. Treat that as a community description of the animation, not as a damage formula.

The community role page says yes, by picking up the gun a defeated Security drops, for +500 XP if that shot kills the cow. That number is not in the official description.
